What are the best powdered eggs? To find out, we did a blind taste test with 13 different brands. We tried whole egg powder, egg white protein powder and even egg yolk powder. Which was best for smoothies? For baking? Here's are our top-scoring egg powders.

Powdered Eggs 101

Egg powder is great for several uses: camping, extra protein in a smoothie or even part of an emergency food supply. Since it is shelf stable, some folks put a can of powdered eggs in their hurricane survival supplies, for example. 

As a baker, I can’t tell you the number of times I’ve run out of eggs at a crucial moment . . . having powdered eggs around can fill the gap when you can’t get fresh eggs. 

Another good use: recipes that call for egg yolks. If you use a fresh egg, you have to separate the egg and then do something with the egg whites (usually throw them away, in my experience). Using egg yolk powder solves that dilemma and involves less waste.

Other recipes need only the whites. But what happens when you separate your last egg and the yolk breaks into the white. So much for making meringue in that case!

We tried out several egg powders to find the best bets—by doing a blind taste test. Which tasted best? Best for baking? Here are the ones we liked the most.
