Popular in baked goods like macarons and quick breads, almond flour is also a staple for those folks who are gluten-free. And because it is low in carbs (and high in protein), those who adhere to a keto-friendly regimen turn to it as a substitute for other flours.
Hint: store this type of flour in your refrigerator. Why? Because it has a higher oil content, almond flour can oxidize at room temperature . . . and spoil more quickly than regular flour. It can be stored in refrigerator for up to six months (and up to a year in a freezer).
So given almond flour’s newfound popularity, you’d think it would be affordably priced . . . yet it still runs 45% to 55% more than regular flour. But there is good news: we found a budget-friendly version that is also excellent in quantity: Blue Diamond Almond Flour. Here’s more:

It’s true—not all almond flour is from blanched almonds. (Blanched almonds are soaked in boiling water to remove the skins). And that may matter if your cake or cookie recipe calls for blanched almond flour for aesthetic reasons!

• Made in dedicated gluten-free facility.
• Allergy alert: made in facility with tree nuts and soy.
• Kosher.
• After opening, it should be refrigerated.
• Made from California almonds.
What Needs Work
• Not as keto-friendly as other brands. That’s because this flour has higher carbs (per gram) than others we tested. We’re not sure why, but the extra carbs are not a favorite of those who are following keto regimens.
• Grind was more coarse compared to others we tested, in our opinion.

Best Low Carb: Nature’s Eats Blanched Almond Flour
Yes, most almond flour is low carb—but some are lower than others.
The flour lowest in carbs among the almond flours reviewed in this article is Nature’s Eats. With only 3 grams of carbs per 15 gram serving, Nature’s Eats has about 40% fewer carbs than other national brands. And good news: it tastes the same (as far as we could tell) in the recipes we tried.
Another bonus: this flour is also easy on the wallet.

What Needs Work
• Allergy alert: made in facility that processes peanuts, brazil nuts, cashews, coconut, hazelnuts, macadamia nuts, pine nuts, pistachios, walnuts, milk, wheat, soy. Yes, you read that right—this flour is made in a facility that processes wheat . . . so this isn’t perhaps the best choice for those who are on strict gluten-free diets.
