Finding the Best Caviar: Our Tips

Yes, caviar can be very expensive. 

Traditionally, caviar refers to the eggs or roe from sturgeon, but in recent years lumpfish caviar has come into the market as a more affordable alternative.

Does it taste the same as traditional sturgeon caviar? No, but if you just using caviar as a garnish or topping for sushi, then a small amount of the affordable caviar may be just the trick.

If you want to use caviar as a spread, splurging on a more pricey version makes more sense.
