Coconut Flour 101 . . . And A Recipe!

Let’s talk coconut flour!

Like all things coconut, coconut flour is capturing the imagination of bakers looking for a gluten free option that adds texture and zing to recipes.

After trying out several popular coconut flour brands, we found this flour is most impressive in donut, cake and muffin recipes. And yes, we will share a recipe for cinnamon donuts made with coconut flour before we get to the winners (you’re welcome).

A quick word of advice: you can replace up to 20% of the regular flour you see in a recipe . . . but only if you add an equivalent amount of additional liquid to the mix. That’s because most coconut flour is made from dehydrated coconut—and dehydrated coconut tends to absorb moisture. So adding more liquid to the recipe prevents the recipe from turning out too dry.

As always, we do blind taste tests—that way we aren’t influenced by fancy packing or brand names. Before we get to the winners, here’s the promised cinnamon donut recipe!

Recipe: Cinnamon Donuts!

YIELD: 6 doughnuts

PREP TIME: 20 minutes

BAKE TIME: 20 minutes

INGREDIENTS

Doughnuts:

  • 4 eggs
  • 1/3 cup Anthony’s Organic Extra Virgin Coconut Oil, melted
  • 1/3 cup Anthony’s Erythritol or Organic Sugar
  • 1/3 cup plus 2 tablespoons Anthony’s Coconut Flour
  • 1/3 cup Anthony’s Arrowroot Starch or Tapioca Starch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Topping:

  • 2 tablespoons butter, melted
  • 1/3 to 1/2 cup Anthony’s Erythritol or Organic Sugar
  • 1 teaspoon Anthony’s Ceylon Cinnamon

INSTRUCTIONS

  1. Preheat the oven to 350° F.
  2. Grease a doughnut pan.
  3. Whisk the eggs with coconut oil and sugar.
  4. Add the coconut flour, arrowroot, baking soda, and salt and mix well.
  5. Divide batter between 6 doughnut “cups.”
  6. Bake for 15-20 minutes.
  7. Combine the sugar and cinnamon for the topping in a shallow bowl.
  8. Brush the doughnuts with butter and dust in cinnamon sugar.
