What is the best sugar-free maple syrup? To find out, we gathered the pancake enthusiasts among our staff and did a blind taste test with 9 different brands. Which had the best flavor? The best organic option? Here are the winners.

Finding the Best Sugar-Free Maple Syrup . . . and a Recipe for Sugar-Free Pancakes

Let’s talk pancakes and sugar-free maple syrup.

If you are on a sugar-restricted diet, there is good news: we found a dozen or so brands of maple syrup with no sugar. Some of these syrups are sweetened with stevia, sucralose or other alternative sweeteners like allulose. The latter is a newer option made from figs and raisins. 

To test these syrups, we whipped up a batch of pancakes:

Before we get to the winners, here is a recipe for sugar-free pancakes to go along with your sugar-free pancake syrup:

Recipe: Puffed Apple Pancake

Sugar-Free-Puffed-Apple-Pancake

This breakfast favorite puffs as it bakes. Be sure to be ready for it to come out of the oven as it deflates rather quickly. You want to be waiting for it, not the other way around.

Prep Time: 10 minutes
Cook Time: 30 minutes
Yield: 6 servings

Ingredients:

  • 1/4 cup butter
  • 1/4 cup Pyure Organic All Purpose Stevia Blend
  • 2 apples, peeled, cored and thinly sliced
  • 3/4 tsp cinnamon, divided
  • 4 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • Pinch salt
  • 1 tsp Pyure Organic All Purpose Liquid Stevia
  • 1 cup all-purpose flour
  • Lemon wedges (optional)

Instructions:

  1. Preheat oven to 400°F.
  2. Melt butter in heatproof or cast-iron skillet over medium heat. Add stevia blend, apples and 1/2 tsp cinnamon. Sauté for 8 to 10 minutes or until apples are tender and golden.
  3. Transfer apples in skillet to oven and heat for 5 minutes (pancake will puff best in a hot pan).
  4. Meanwhile, whisk together eggs, milk, vanilla, remaining cinnamon, salt and liquid stevia. Whisk in flour until combined.
  5. Pour batter into hot pan and immediately return to oven.
  6. Bake for 15 to 18 minutes or until pancake is puffed, golden and set in the center.
  7. Serve warm with a lemon wedge if desired.
  8. Tip: Substitute apples with plums or ripe firm pears.
